Each Easter since 1492, villagers of Bayonne have gathered for a gastronomy fair centered on their prized Jambon de Bayonne hams. The annual tradition continues today and is an amazing opportunity to taste and purchase this delectable specialty directly from the butchers. Jambon de Bayonne is a protected product with strict rules and a defined geographical border. Each air-dried ham is judged by master tasters to identify the best producer of the year, a distinction that comes with an award and plenty of hungry buyers. In addition to ham you can purchase other gastronomy specialties from the region including cheeses, honey, ciders and jams.
